Vegetable pot
Slow cooker recipe

Ingredients:

3 tomatoes

2 potatoes

1 zucchini
-
1 small eggplant
-
2 onions
-
2 cloves garlic
-
100 g goat cheese
-
4 tbsp olive oil

5 sprigs of parsley

Salt and freshly ground pepper
Preparation:

Peel onions and garlic.

Cut all vegetables into 2mm thin slices.

Add some oil to the slow cooker insert.

Add all vegetables (except garlic).

Season with salt and pepper.

Add the remaining oil to the vegetables.
-
Slice the goat cheese and spread it over the vegetables.

Chop the garlic and parsley and sprinkle on top.

Put the lid on and start the slow cooker.
