Westphalian carrot stew

Ingredients:

750 g carrots

750g potatoes

400 ml vegetable broth

Salt, pepper, pinch of sugar

40g butter
Preparation:
- Put the carrots and potatoes in the slow cooker insert and season with salt, pepper and stir through.
- Pour in vegetable broth.
- Cook on HIGH for about 4.5 hours (LOW about 8 to 9) until the vegetables are soft.
- Remove a cup of broth.
- Mash with a potato masher until desired texture.
- Add butter over it and let it melt.
- Stir through and serve as desired, with bratwurst or meatballs or with fish fingers or Vienna sausages.
