Germany Westphalian Carrot Potato Mash 3

Ingredients:

  • 750 g carrots

  • 750g potatoes

  • 400 ml vegetable broth

  • Salt, pepper, pinch of sugar

  • 40g butter

Preparation:

  1. Put the carrots and potatoes in the slow cooker insert and season with salt, pepper and stir through.
  2. Pour in vegetable broth.
  3. Cook on HIGH for about 4.5 hours (LOW about 8 to 9) until the vegetables are soft.
  4. Remove a cup of broth.
  5. Mash with a potato masher until desired texture.
  6. Add butter over it and let it melt.
  7. Stir through and serve as desired, with bratwurst or meatballs or with fish fingers or Vienna sausages.
