Cold zone principle:
In cold zone deep fryers, the heating element is not located under the frying container; it hangs freely in the oil at a distance of one to two centimeters. The heated oil rises, cools down and sinks back to the bottom of the container and collects under the heating element, the so-called “cool zone”.
