Delicious rice salad recipe

Our summer rice salad with mango is perfect for a quick and light lunch. Packed with colorful, fresh ingredients and a hint of exotic flavors, this salad brings summer straight to your plate.

The key to a delicious rice salad is choosing the right type of rice. For this salad, we recommend aromatic varieties such as basmati rice, jasmine rice or wild rice. These varieties have a slightly nutty taste that goes wonderfully with the fresh and fruity ingredients.

What makes this salad so special is the colorful variety of ingredients. In addition to classic vegetables such as cucumber, peppers and tomatoes, we add sweet mango and nuts. The dressing:

The perfect harmony

The right dressing brings all the ingredients together and highlights the flavors. Our favorite is a light yogurt dressing with lemon, dill and garlic. It gives the salad a fresh, creamy note that goes perfectly with the other ingredients. But of course you can also experiment with different oils, vinegars and herbs to find your own perfect dressing.

Recipe:

Rice salad with mango

Ingredients:

  • 200 g basmati rice, jasmine rice or wild rice
  • 1 ripe mango, peeled and cut into cubes
  • 1 cucumber, chopped
  • 1 red pepper, diced
  • 150 g cherry tomatoes, halved
  • 1 red onion, finely chopped
  • 50 g chopped nuts (e.g. almonds or cashews)
  • Optional: strawberries, raspberries or peaches
  • Optional: fried shrimp or chicken strips

Preparation:

  1. Put the rice in the low carb rice cooker, select the desired function and let it cook.
  2. Wash and peel the vegetables and the mango and cut into bite-sized
    Cutting pieces.
  3. Mix all ingredients in a large bowl.
  4. For the dressing, yoghurt, lemon juice, olive oil, garlic
    and dill in a small bowl. Add salt and pepper
    season to taste.
  5. Pour the dressing over the salad and mix everything thoroughly
    mix.
  6. If desired, add additional fruits or fried
    Top with shrimp/chicken strips.
