Recipe:
Rice salad with mango
Ingredients:
- 200 g basmati rice, jasmine rice or wild rice
- 1 ripe mango, peeled and cut into cubes
- 1 cucumber, chopped
- 1 red pepper, diced
- 150 g cherry tomatoes, halved
- 1 red onion, finely chopped
- 50 g chopped nuts (e.g. almonds or cashews)
- Optional: strawberries, raspberries or peaches
- Optional: fried shrimp or chicken strips
Preparation:
- Put the rice in the low carb rice cooker, select the desired function and let it cook.
- Wash and peel the vegetables and the mango and cut into bite-sized
Cutting pieces. - Mix all ingredients in a large bowl.
- For the dressing, yoghurt, lemon juice, olive oil, garlic
and dill in a small bowl. Add salt and pepper
season to taste. - Pour the dressing over the salad and mix everything thoroughly
mix. - If desired, add additional fruits or fried
Top with shrimp/chicken strips.
